Lighter No-Bake Summer Cheesecake

Ingredients

Base:

250g plain biscuits

150g butter, melted

Filling:

250g cream cheese, room temperature

1 cup Symbio™ Probalance™ Natural Unsweetened Yoghurt

¼ cup liquid honey

2 Tbsp lemon juice

1 tsp vanilla bean paste

Topping:

40g Symbio™ Probalance™ Natural Unsweetened Yoghurt

strawberries, finely diced

white chocolate, chopped


Method

Base:

Process biscuits to a fine crumb. Add butter and process until well combined.

Divide mixture evenly between four glasses, pressing until firm.

Filling:

Place cream cheese in a large bowl and beat until smooth.

Add Symbio Probalance Natural Unsweetened Yoghurt, honey, lemon juice and vanilla. Whisk until well combined and no lumps remain.

Divide filling evenly between prepared glasses, smoothly with the back of a spoon. Place in the fridge to set for 2 hours or overnight.

Topping:

Before serving, dollop two heaped teaspoons of Symbio Probalance Natural Unsweetened Yoghurt on top of each cheesecake.

Top with diced strawberries and finish with a sprinkling of white chocolate pieces.


Makes four individual cheesecakes.
